What an enzyme cleaner is

An enzyme cleaner does not strip soil off a surface chemically. It digests it. Enzymes are biological catalysts, each one shaped to break a particular class of molecule, and the soil found on a working hard surface is almost entirely organic: fat and oil, protein, starch, and plant fiber. Surface Cleaner (SC) puts a multi-enzyme blend to work on all of it at once, cutting large organic molecules into small water-soluble fragments that release from the surface and rinse away. Nothing in the formula has to be aggressive for that to happen, which is the whole point.

How enzymatic cleaning works

Each enzyme class has a job. Protease breaks down proteins, the soil behind blood, food residue, and most organic odor. Lipase breaks down fats, oils and grease, including the films that build up on kitchen floors and equipment. Amylase breaks down starches and sugars. Cellulase works on plant fiber and the cellulosic material in general soil. Working together they reduce a mixed organic deposit to soluble pieces small enough to rinse clear, leaving a surface that is clean and film-free rather than coated in the residue a heavy detergent leaves behind. Enzyme activity is temperature and pH dependent, which is why SC lists a working range of 50 to 131°F and pH 5.5 to 10, with peak activity at 86 to 113°F and pH 7 to 9.

How enzyme cleaning compares to caustic and chemical cleaners

A caustic or solvent cleaner works by chemical attack, and it does not distinguish between the soil, the surface and the person holding the bottle.
